How To Cook Beef Tripe In Tomato Sauce

 

Beef Tripe is eaten in many parts of the world. and when cooked properly it could be eaten with anything. In our Cameroon jargon we call it towel, and it could be cooked either in soups, it could be fried and as well in tomato sauce.

Difficulties: If there is one difficulties you will encouner when it comes to cooking tripe, it's the time. this is because tripes takes much time to cook since you have to make sure it is soft.

Ingredients
  • 800g of fresh beef tripe
  • Fresh tomatoes
  • black pepper (ground) 1tbspn
  • white pepper (ground) 1tbspn
  • 2 Large carrots
  • 50g green beans
  • basil 1tbspn
  • fresh parsley
  • 1 large green pepper
  • 1tspn of ground fresh pepper
  • 1 glove of garlic (chopped)
  • 2 Large Onions
  • a slice of ginger


                                                  Directions
Step1: Wash the tripe in much water in order to remove all the sand and make sure it's clean.Put the meat in a meduim size pressure pot, to it add the ground white pepper, black pepper, half slice of onions chopped, a slice of ginger to remove any unpleasant small, salt and a cube of maggi to taste. let it boil for 45 minutes

                                                       

Step 2: Put the tomatoes, garlics, onions,parley and the basil in a mixer and just chop. I love putting more onions to  tomato sauce because it makes the sauce lighter. If you don't like the spices to be chopped, you could blend for some few minutes.



Step3: Once the tripe is soft, remove it from the pressure cooker and put it to a miduim size pot then add the ground tomatoes to the pot containing the tripe. Let it cook for 20 minutes. Make sure the tomato is cooked and it does not longer taste sour.


Step4: Add the sliced carrots, green beans, salt and the remaining maggi to taste. Then let it simmer for like 2 to 3 minutes. Personally I don't like when my vegetables is over cooked so i prefer it crunchy.


Step5: add the sliced Green pepper and two cooking spoon of vegetable oil. let it simmer for two minutes et Voila your tasty beef trip in tomato sauce is ready.

Beef tripe in tomato sauce can be served with any complement of your choice. But today I decided to serve it with white basmati rice.
Serve it warm and enjoy with family and friends
