How To Make Egg Plant(Garden Egg) Sauce


Hello my lovely Glowers and foodies, hope you all had a blessed weekend. the long awaited post is here. Egg plant or garden egg sauce like it's normally called.
This slightly bitter fruit is mostly consumed either with achu or kolanuts back home, but it's one of my favorite sauce and I love cooking this not only because it's easy to cook but also because of it's shealth benefits. 
For this sauce you can use either the green, the purple or the white egg plant depending on your location and the season but the preparation is same for all.  According to research a raw egg plant has the following components; manganese, potassium copper and thiamin (B1) , magnesium It's also a good source of vitamin B6, folate and thiamin. and just in case you don't know it's rich in dietary fiber and also good for weight loss and it helps in lowering blood cholesterol and eye pressure in glaucoma.

How to make egg plant sauce
 prep time: 15 mins                                                                                           Serves:4
Cooking time: 30 mins

                                                           Ingredients                       
                                        14 medium sized egg plant  ( purple, white or green)  
                                           3 cooking spoon vegetable or red oil                            
                                           2 large smooked fish of your choice 
                                             100grams of ground cray fish
                                           5 large red tomatoes chopped
                                          2 tbsp freshly chooped garlics
                                          2 meduim onions well chopped
                                           3 cubes of magi
                                           1 tbspn white and black pepper ground
                                           1 tbsp ground pepper 
                                            1 largegreen pepper chopped
                                            3tbsp chopped parsley
                                            1tbsp fresh ground pepper
                                             Salt to taste

                          Directions:::
Step1: Remove the green stalks from the egg plant and rinse. Put the egg plants in a medium sized pot and boil till soft, this could take 10 to 15 minutes. This is done to make the marshing or chopping easier. some people like thei egg plant smooth while others like it chunky too, so it all depends on your taste. After boing put the boiled egg plant in a cool water to cool. Peel the skin off then marsh or chop. Then put this aside.

Step2: Heat up the vegetable or red oil in a pot till it loosen up a little. Then add the chopped onions, garlics and tomatoes. Stir fry for about 5 mins.The add the smooked fish leave to cook for 5 minutes.

Step3: Gently pour the chopped egg pant, cray fish, white peper, black pepper , salt and the magi cubes for seasoning, cook for 5 minutes then add the choped green pepper and parsley.

Step4: Let it simmer for two minutes et Voila your yummy egg plant is ready
          Serve it hot with fried or boiled plantain; or boiled  yams as well
