Carrot muffins recipe
Carrots are my fave veggies which I can just twist it the way I want. From putting in salads or foods or even in cakes. I thought carrot cake was my best ever since I tried out the recipe.
But after seeing these carrot muffins on a foodie group I follow, I thought of trying it out then share the recipe with you all. Christmas is around the corner so adding this recipe to your cook book wouldn’t be a bad idea. With just few ingredients, a little cooking time, carrot muffins are the best and easiest snacks you need to know. Talk of the flavour....hmmmm its just like heaven on earth. Without much talking let’s goooo


     Ingredients::::
2 cups of grated carrots
2 cups of all purpose flour
¼ cup of sugar
2 eggs
¼ cup of milk
5tbsp of vegetable or corn oil
1tbsp of cinnamon
1tbsp baking powder
2tbsp of coconut flavour
1tbsp vanilla extract
1tbsp nutmeg
 a pinch of salt
Prep time: 10 minutes
Cook time: 10 minutes
          Directions::::
1- Mix all the wet ingredients (eggs, oil, milk, vanilla and coconut flavour) in one bowl

2- In another bowl, mix all the dry ingredients (grated carrots,flour, sugar,nutmeg, baking powder and the rest)  mix well so that you can get a uniform mixture.

3- Add the wet mixture gently to the dry mixture without over stiring the mixture.

4- Get the oven ready at about 180° hot.
5- Pour the mixture in a cupcake mold and put in the over

6- Check after 8-10 minutes, put a tooth pick and if it comes out clean then your muffins are ready😋

Carrot muffins can be eaten as snacks or for breakfast. Feel free to enjoy your muffins with either ice cream, milk or a cup of freshly squeezed juice.
